Raízes – Horta da Terra is built on three pillars: exceptional produce, fire-led cooking, and shared dining. Our approach celebrates local, seasonal ingredients, carefully selected and deeply connected to the Algarve. At the heart of the kitchen, flame and embers shape a cuisine of deliberate simplicity and natural intensity, where time becomes an ingredient, as in our lamb slow-roasted for 24 hours in a wood-fired oven. More than a meal, Raízes is a social experience where gastronomy and connection meet around the table.
